The first step in sake making is polishing (milling) the rice to remove the outer layer of each grain. 
The higher the polish, the higher the grade. 
· Ginjo grade - 60% or less rice remaining. 
· Daiginjo grade - 50% or less rice remaining. 

Junmai is the Japanese word meaning "pure rice." 
Junmai sake is brewed using only rice, water, yeast, and koji
